Victoria Cake


Some memories just fill your heart with so much joy. Every time I eat this cake it reminds me of tea time growing up. My mom used to love to make this cake for us. We would enjoy it with a cup of milky, sweet tea and talk about our day. This cake truly is a gem. It’s light, just sweet enough, creamy and the strawberries make it just perfect. This time saving hack is one for the books. Save it!! It’s truly remarkable in all your cake recipes. To make whey you can boil milk and when it reaches a boiling point add 2 tsp of vinegar. The milk will curdle. Let it cool. Strain it in a mesh strainer. Let the whey cool. You now have cheese in the strainer. Squeeze out all the liquid by putting it in a cheese cloth and squeezing out all the liquid. Now whip it with some cream and you have delicious home made cream cheese.

Victoria Cake


  • 1 box French vanilla cake mix
  • 4 eggs
  • 1.5 cups whey 
  • 1/2 cup oil 
  • 1 carton Whipping cream
  • Sugar to taste 
  • 1/2 tsp vanilla extract 
  • Strawberry jam


  • Mix the cake mix, whey, oil and eggs till you get a nice batter. 
    Grease your cake pan and pour the batter. Bake at 350 till done
    Set aside and let it cool completely.
    Now whip your cream and sugar till stiff peaks form
    Wash and slice your strawberries and sprinkle with sugar and set aside
    Now take out some jam and microwave it for 30 seconds so that it’s soft and easy to apply
    Slice your cakes in half
    Spread jam in the middle Pipe a thick layer of cream on the cake
    Top with strawberries.
    Cover the cake with the other half of the cake.
    Pipe more cream and top with a few strawberries and dust with powdered sugar and enjoy.
