Paya Instant Pot Recipe
This recipe is my moms originally. I just adapted it to suit an instant pot because I really had no desire to spend all day stirring the pot and having the whole house smell of paya. - 2.5 lbs mutton paya
- 2 bay leaves
- 1 black cardamom
- 2 tsp salt
- 1/2 tsp turmeric powder
- 2 tablespoons garlic paste
- 1 table spoon ginger paste
- 1 tablespoon green chilipaste
- 1 star anise
- 2 tsp garam masala
- 2 tspcumin powder
- 2 tsp Kashmiri red chili powder
- 2 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp ginger powder
- 1 tsp anise seed
- 1.5 cups fried onions
Sauté the mutton paya with 2 bayleaves and 1 black cardamom, salt to taste and 1/2 tsp turmeric powder. Add 6-8cups of water and pressure cook for 40 minutes Natural release Remove the paya into another bowl and put the insert back intothe instant pot and turn on the sauté mode and add 2 tbsp oil
Now add 2 tablespoons garlic paste, 1 tablespoon ginger paste and 1tablespoon green chili paste 2 tsp garam masala 2 tsp cumin powder2 tsp Kashmiri red chili powder2 tsp coriander powder1/2 tsp turmeric powder1 tsp ginger powder1 tsp anise seed Cook for a minute or two then add 1/4 cup water and cook till the oilcomes to the top Add additional salt to taste and the fried onions
Cook till the oil comes to the top and then add 1/2 cup of yogurt mixed well with 1 cup of hot water
Keep cooking till oil comes to the top and then pressure cook for 7 minutes moreNatural release. Serve with chopped cilantro, sliced ginger and lemon and of course hot, fluffy naan.
