I love butterscotch anything. There’s something so nostalgic about the flavour of butterscotch. The buttery sweetness with a hint of salt. I love these cookies when sandwiched between ice cream. So indulgent! Do let me know your thoughts when you make them.
Ingredients:
- 1/2 cup butter
- 1/2 cup brown sugar
- 1 healthy pinch of salt
- 1/8 tbsp vinegar (optional)
- 1 tbsp vanilla
- 1/2 cup cup flour
- 1 tbsp baking soda
- 2 cup2 butterscotch chips
Method:
Preheat your oven to 350
Beat your butter and sugars till pale
About 4-5 minutes
Add egg, vanilla and vinegar.
Now slowly add the flour and baking soda
1 tbsp at a time till it’s incorporated well. Don’t over beat the batter.
Now gently fold in the butterscotch chips.
Make rounds and bake about 2-3 inches apart till golden brown or till your desired doneness. I bake it for 8-10 minutes and remove from the baking sheet to a cooling wire immediately
Enjoy with a glass of ice cold milk
