Butterscotch Cookies

I love butterscotch anything. There’s something so nostalgic about the flavour of butterscotch. The buttery sweetness with a hint of salt. I love these cookies when sandwiched between ice cream. So indulgent! Do let me know your thoughts when you make them.



  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1 healthy pinch of salt
  • 1/8 tbsp vinegar (optional)
  • 1 tbsp vanilla
  • 1/2 cup cup flour
  • 1 tbsp baking soda
  • 2 cup2 butterscotch chips



  • Preheat your oven to 350
  • Beat your butter and sugars till pale
  • About 4-5 minutes
  • Add egg, vanilla and vinegar.
  • Now slowly add the flour and baking soda
  • 1 tbsp at a time till  it’s incorporated well.  Don’t over beat the batter.
  • Now gently fold in the butterscotch chips.
  • Make rounds and bake about 2-3 inches apart till golden brown or till your desired doneness. I bake it for 8-10 minutes and remove from the baking sheet to a cooling wire immediately
  • Enjoy with a glass of ice cold milk
