Asian style Salmon with Mixed Veggies over Buttered Orzo

This recipe is a great way to enjoy the fresh taste of salmon and the nutritional benefits of mixed vegetables with an asian flavour. This recipe can also be modified by using different kind of fish such as cod or tilapia, and different kind of vegetables like asparagus, carrots, and cauliflower. Feel free to experiment with different seasonings and herbs to add more flavor to the dish.

Ingredients
  

For the marinade:

  • 10 pods Garlic
  • tbsp Ginger crushed
  • 4 tbsp Soy sauce
  • 1-2 tbsp Siracha or to taste
  • 1 Juice Lemon
  • 1 bunch Coriander
  • 1 tbsp Red Pepper fFakes
  • 2 tbsp Honey
  • 2 tbsp Extra Virgin Olive Oil
  • 1 Lemon thinly sliced
  • 1 cup Orzo
  • 1 Red Pepper cubed
  • 1 Green Pepper cubed
  • 1 Eggplant cubed
  • 1 Onion sliced
  • Salt and pepper to taste

Instructions
 

  • In a nutri bullet blend all the marinade ingredients and set aside. In a cast iron skillet heat oil and add the salmon fillets skin side down. Sprinkle with salt. Cook about 5-7 minutes. Set them In an oven safe dish and cover with foil. Pour the marinade over it. Cover and bake for about 15 minutes. Now uncover add lemon slices and bake for another 5 minutes. Now set your over to broil and bake till the skin is crispy.
  • In the cast iron skillet you used to cook the salmon add more oil and throw in all the veggies and garlic pods. Salt and pepper to taste. Cook till done. Now boil your orzo. Drain when cooked and add some salt and butter. Now layer your plate. First add the orzo and top with veggies and add your salmon next to it. Drizzle with any left over marinade
