The joy of biting into a warm and gooey chocolate chip cookie that's perfectly baked with just the right amount of sweetness and of course made with the finest of chocolate is one that is not easily surpassed unless its a chocolate chip cookie ice cream sandwich! One bite of this chocolate chip ice cream sandwich will have you experiencing pure bliss. These are great make ahead treats and are a definite crowd pleaser of both children and adults alike.

  • 2 1/4 cup All-purpose flour
  • 1 tbsp Baking soda
  • 1 tbsp Salt1 cup (2 sticks) butter, softened
  • 3/4 cup Granulated sugar
  • 3/4 cup Brown Sugar packed
  • 1 tbsp Vanilla extract
  • 2 large Eggs
  • 2 cup Lindt chocolate Lindt chocolate chopped up ( the lindt milk chocolate bar )
  • 24 piece Lindt chocolate


  • PREHEAT oven to 375° F.COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs. Next beat in flour mixture. Stir in the 2 cups of chocolate. Make rounds put a piece of chocolate and make the dough into a ball around the chocolate. Bake till golden brown. LET THE COOKIES COOL COMPLETELY. Now take any ice cream of your choice that’s slightly softened and sandwich the cookies. I used coconut ice cream and rolled it in coconut flakes. Put it in the freezer immediately and when frozen solid wrap in foil and place in air tight ziplock bag.
    P.S This recipe from the nestle toll house cookie however I changed the chocolate to Lindt which has a much nicer flavor and added the chocolate inside each cookie. Please make it and tag me. It makes me so happy and helps grow
