Korean Inspired Eggplant Skewers
Ingredients
- 1 eggplant sliced length wise
- Olive oil
- 1 tsp sesame oil
- Garlic to taste
- 1 tablespoon gochujang or totaste
- 2 tablespoons brown sugar
- 3 tablespoons soy sauce
- 1 tsp rice vinegar
- Sesame seeds
Instructions
- Cut your eggplant in slices andlay it on a parchment paper lined sheet pan. Drizzle generously with olive oiland sprinkle a little salt. Bake at 375 till soft but not too soft. It took meabout 25 minutes but keep checking it as every oven is different.Once soft take it out and set aside to cool a bit so that it’s easy tohandleRoll each slice and put it through a skewer. In a pan heat some oil and add the sesame oil.In a bowl mix the gocugang,Brown sugar, rice vinegar and soy sauce and make a sauce. Add some thinly sliced garlic and when hot add your eggplant skewersand let them cook in the garlicky oil. Turn it once and now add the sauce you made and let it all cooktogether. This will make a beautiful saucy glaze. Plate your skewers andsprinkle with sesame seeds and enjoy with steamed jasmin rice.
