Prep the beef. Put cornstarch, water, eggs and salt and make a batter dip beef and fry till crispy. Drain on paper towels.
Next take a tbsp of oil and sauté 1/2 the minced garlic and ginger with all the veggies minus the broccoli.
Add all the remaining ingredients into the wok and stir fry then add the beef and coat it well.
If it’s too runny add a cornstarch slurry to thicken it.
Lastly get water to a rolling boil.
Throw in the broccoli for 2 min and immediately transfer to an ice bath.
Toss in with the beef and enjoy.
