We had a ton of soup growing up. My mom would make the best soups and it would warm our hearts and souls the way only a big bowl of made with love soup can. This has always been one of my favorite soups. I love the spicy and sour taste. It’s a today must make! Do share your thoughts with me when you make it. I’d love to hear from you.
Sweet and Sour Soup
Ingredients
- 6-8 cups chicken stock (you can even use veggie stock if you’d like to make it vegetarian)
- 2 chicken cubes (if you’re making this vegetarian then add a tablespoon vegetable bullion paste)
- 1 cup coleslaw veggies or if you’d like you can shred cabbage and carrots
- 1/2 cup ketchup
- Chili garlic to taste (I used a teaspoon)
- 1/2 cup vinegar
- 1 cup shredded chicken
- 1/2 tsp white chili powder
- 3-4 tbsp soy sauce (I use the low sodium one)
- 1 tbsp sugar
- Chili powder to taste (I used 1 heaped tablespoon)
- 3 eggs beaten
- 1/2 cup cornstarch
- 1/2 cup water
Instructions
- In the instant pot heat up the stock. When it comes to a rolling boil then add the spices and sauces and mix well. Toss in the shredded chicken. .
- Mix the cornstarch and water to form a slurry and pour it in mixing constantly.
- Now put the cabbage and carrots in.
- Drizzle your beaten egg in a circular motion so that it forms egg ribbons.
- Turn off the instant pot
- Garnish with chopped cilantro. Eat with chili vinegar if you enjoy extra spice.
