- 1/2 cup freshly squeezed lemon juice. I highly recommend using Mayer lemons for this.
- 1 tbsp Lemon zest
- 1 cup sugar (if you like it less tart then add more sugar )
- 3 eggs
- 3/4 cup butter
- Combine everything but eggs in the sauce pan and let it come to a rolling boil. Lower the heat. Crack the eggs into your blender and blend. Now put a little bit of the hot liquid into eggs and pulse. At this point you’ll add the warm mixture to the hot mixture stirring constantly. cook for 5 minutes and then incorporate the lemons zest and store in an airtight container in the fridge.
