Kuku pakka (Chicken Coconut Curry)
Ingredients
- 1 can Coconut milk
- 1 Lemon
- 1 large Onion
- 1 bunch Coriander
- 2 Jalapenos
- 6 cloves Garlic
- 1 tsp Ginger crushed
- Salt
- 2 teaspoons Turmeric
- 10-12 Curry leaves
- 2.5 lbs Boneless chicken cut in pieces
Instructions
- Make masala by blending the OnionDhanyaJalapeños (you can reduce it to 1 pepper if you don’t want it too spicy)garlicGingerSet aside.
- Heat oil and add curry leaves.
- Heat oil and add curry leaves.
- Then add the masala you made.
- Cook it for a few minutes and then add the turmeric and salt.
- Cook it for a few minutes till the oil comes to the top.
- Now add the chicken and cook it for a few minutes then add the coconut milk and cook it for a few minutes till all the flavors are incorporated.
- Cook on medium heat till Cooked.
- Take it off the stove and squeeze the juice of 1 lemon on it and stir.
- Garnish with chopped cilantro.
